Happy Wednesday! Hope you’re having a great week! I’m still sort of in denial that we’re in mid-July already. For this week’s food diary post, I thought about doing a July 4th theme, but I honestly didn’t do or eat anything particularly patriotic or unusual. So here’s what I enjoyed on the 3rd, which was, honestly, more of a slowed-down work from home day.
I was originally going to be spending the day with my family, but I was really run down so my mom said, “Go recharge for a few days, you need it.” We all go through phases when we’re more on top of self-care, and I’d definitely been rushing around a bit too much. So I did exactly what she said, and took that Monday at a calmer pace, making time for laundry, a Pilates class, and some food prep to bring me back to Earth. Here’s what I ate through the day:
Breakfast: I made a frittata with egg whites, some goat cheese, grated zucchini, and purple basil I’d picked up the day before at the farmer’s market near my sister’s place. I baked it in an 8 ounce ramekin that’s perfect for a single-serving dish like this.
On the side, I had some frise and roasted purple sweet potatoes. It never ceases to amaze me how much more affordable the NJ farmer’s market is than the madness in NYC. What am I doing with my life again?
Lunch: I made a big salad using up some random veggies and then I topped it off with a turkey burger and a few cloves of black garlic I had to use up.
Snack: Plain Greek yogurt with cocoa powder and peanut butter.
Dinner: I baked some chicken and roasted and sautéed some veggies while doing meal prepping so I had an assortment of that for dinner. Exciting, I know.
Snack: Berries and a mini brie cheese. Every time I have this, I ask myself why I don’t enjoy it more often.
