I hope you enjoyed the DIY pumpkin puree recipe I shared a few weeks ago! Getting pumpkin at the store has been tough, so I’ve been enjoying this approach to make some of my favorite pumpkin recipes. My mom has also been feeding it to her dogs at the vet’s recommendation. When sugar pumpkins haven’t been available, I’ve also swapped in different types of squash like butternut and kabocha. While the taste and texture may be slightly different, the nutrient profile and benefits are very similar, and you can swap as needed.

Here are a few favorites from years past:

Basic Pumpkin Oatmeal – This oatmeal is anything but basic, especially when topped with your favorite nut or seed butter, pumpkin seeds, and a tiny drizzle of maple syrup!

Chocolate Pumpkin Cranberry Quickbread – This perfect-for-the-holidays bread is a delicious addition to any celebration, but it’s wholesome to enjoy for breakfast!

Pumpkin Miso-Tahini Sauce – Made with three simple ingredients, this spread has become a go-to garnish for everything from toast to salad.

Dark Chocolate Pumpkin Tahini Cups – These delicious bite-sized cups are packed with nutrition and decadent taste!

Pumpkin Pie Spice Green Smoothie – From color to flavor, this smoothie is bright and happy, and it’ll have you feeling the same way!
