Summer is a time we see a lot about entertaining and preparing beautiful, trendy desserts. Sounds great, in theory, but when you’re trying to cram extra work into shorter weeks to make room for travel and social events and possibly budgeting for a summer vacation, those Pinterest-perfect seasonal desserts featuring trendy superfoods can make us want to barf. Please tell me I’m not alone in this! It’s just that sometimes you feel like, Who has the time and money? It’s another side of the same coin that makes me roll my eyes whenever I see a girl in a cute Modcloth outfit sipping iced coffee from a mason jar (probably with homemade almond milk) on a sticky NYC subway.
Sorry if you are that girl—it’s me, not you! Keep doing what what makes you happy! My issue is that I basically wake up, like, on fire every morning with no room in my brain to get precious about my morning caffeine fix. #sagittariusproblems
Anyway. We often think we have to spend lots of time and money when it comes to fun, delicious, food, but in reality, it’s totally possible make an on-trend dish featuring simple ingredients like canned fruits and veggies and pair them with other foods and flavors that are of the moment.
Today I’m linking up with the Recipe ReDux and Libby’s to bring you one of my summer go-to’s for when I need to make something festive happen fast and don’t want to just show up with a sweaty bottle of prosecco. Sometimes just popping open a bottle of something sparkly and calling it a celebration is totally acceptable, but some occasions call for a legit dessert.
Since 1868, Libby’s wide variety of shelf-stable, conveniently packed, nutritious and delicious fruit and vegetable products having been helping busy families get fast, wholesome meals on the table without sacrificing flavor or nutrition. Canned peaches were a staple in my house growing up, and they’re a great way to cut down on prep time.
I like that these are packed in pear juice instead of God-bless-America corn syrup. They’re packed with that summer peach flavor without being too sweet. I also appreciate that many of Libby’s products have cans with BPA-free linings. You can only control so much of the crazy s*** you’re exposed to, so it’s nice to be able to cross that one off the list of things to lie awake worrying about.
A fruit crisp (I had to look up the difference between a crisp and a cobbler, and the oats make this a crisp, as opposed to a cobbler, which typically features a biscuit or batter topping) is a great choice when you’re short on time but want to actually turn on the oven and say, “Look, I baked.” Using vibrant spices is one of my favorite ways to cut down on the need for sugar for flavor. This recipe pairs humble canned peaches with a zing of trendy ginger for a delicious summer dessert you don’t have to slave over. Enjoy!
Quick & Easy Lower-Sugar Peach Crisp
- 1 15-ounce can of Libby’s peaches with pear juice concentrate
- 2 tablespoons chopped crystallized ginger
- 1/2 cup rolled oats
- 1 tablespoon coconut oil or butter, melted
- 1 teaspoon vanilla extract
- 1-2 teaspoons honey or maple syrup
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon ground ginger
- Dash of sea salt
- Preheat oven to 400 degrees F.
- Pour peaches into a baking dish. Mix in chopped crystallized ginger and set aside.
- In a small bowl, mix together remaining ingredients to make topping.
- Spread oat mixture over peaches.
- Place dish in oven and bake at 400 until 30 minutes or oats have begun to brown and fruit is bubbling.
