Happy LentilsSo wow, Friday, already! How did that happen? I’m heading out to New Jersey for a mindful cooking class I’m co-teaching tonight and can’t wait! We’re doing a heart-healthy menu the features some of my favorite seasonal super foods. There won’t be a whole lot of cooking going on in my own kitchen this weekend, since I’ll be working and running around a lot, but here are some recipes that caught my eye this week:

F*** carb-phobia. This Lentil, Mushroom & Sweet Potato Pie from The Kitchn sounds delicious and just happens to be vegan. Perfect for some Meatless Monday action—especially if this Meatless Monday also happens to involve snow.
