Because of the snowstorm earlier this month, we had to postpone my mom’s birthday celebration by a week. We kept it really low-key and it was really nice. I’m lucky my family lives nearby so I can take those short and sweet trips.
For this week’s What I Ate Wednesday post I’m sharing a look at what I ate last Saturday, when I took an afternoon bus to go see the fam.
Breakfast: roasted purple sweet potato and then eggs and leftover veggies.
Lunch: a big salad with chicken I made in the instant pot
Snack: 2% yogurt with chia & cinnamon ; carrots with hummus & guac and a bourbon while cooking
Dinner: Pan-seared tuna, sautéed bay scallops, salad, sautéed bok choy, and a baked teriyaki wing ; berries for dessert
