Happy What I Ate Wednesday! Hope your week is off to a great start. As I do every Wednesday, I’m sharing a look at my personal day-to-day eats. There’s a lot of misconceptions out there about the fact that registered dietitians and nutritionists are normal people, so I like to use these food diary-type posts to shed a little light on that one!
Last week I gave you guys a glimpse at a recent work trip, so this week I’m sharing a look at a work-from-home (excuse me, #wfh) day that did not involve spending 6 hours on a bus driving to and from Greenville, Mississippi or taking selfies in rice fields.
Travel can be so fun and eye-opening, but it certainly has a way of throwing off your work, sleep, and general life schedule. I was happy to be in New York for all of last week and last weekend. It gave me a chance to catch up and get back on track—or at least into some semblance of a routine (not knocking a satisfying 4:45 a.m. hotel workout, but it would be hard to sustain that all the time).
On this particular day, I enjoyed a walk in the park before diving into a lot of projects. I love getting to start my day this way at least once a week-I feel like the outside timeouts me in a calm, productive mindset.
For a post-walk breakfast, I enjoyed leftover frittata & roasted sweet potato. I was trying to use up some baby spinach so added that too.
While testing recipes I had a few bites, so lunch was pretty simple-greens with zoodles, cucumber, and leftover chicken with vinegar to dress and a little goat cheese.
For lunch “dessert” /pre-yoga snack, I had blackberries with a little more goat cheese
I went to a mid-afternoon yoga class and ran a few errands. I was so hungry when I got home so had plain Greek 2% yogurt with cacao powder & a teaspoon of peanut butter (no photo)
The weather was cool and weird so I made this vegan mac & cheese for dinner. I hardly ever crave tofu or pasta, but for some reason this sounded good. Also, not sure if this is weird, but I love smoked paprika on this.
I was legit hungry again a few hours later, so before bed I had more of that 2% plain yogurt with teaspoon of maple syrup—it was exactly what I needed.
