One good thing about super-busy days is how quickly they fly by—barely leaves you any time to feel stressed or tired. Pros and cons, obviously. Here’s what I ate on Sunday, which involved mostly errand-running and drinks with some RDs I did my grad program and internship with.
- Breakfast: Carrot zucchini oats topped w/ PB
- Lunch: Langostino tails scrambled with egg whites and chives (inspired by this recipe); salad; toast with a laughing cow garlic & herb cheese wedge topped with roasted zucchini (can you tell I was trying to clean out the fridge?)
- Snacks: Greek yogurt with cereal and berries; later on—prosecco and oysters with the girls
- Dinner: Salsa verde chicken soup over steamed kale I needed to use up; sprouted grain toast with guacamole hummus from Trader Joe’s (love this stuff) and roasted pepper; a square of caramel & sea salt dark chocolate
