When it comes to healthy snacks, weird can totally be good. This is one of my favorite 200-calorie snacks when you’re craving something sweet. It’s super-easy to make. You can even do it in an office microwave.

PB and J Sweet Potato

It also makes a good breakfast—maybe just add a little more peanut butter. You can also swap in your favorite nut butter.

PB & J Sweet Potato


  • 1 small sweet potato
  • 1 teaspoon peanut butter
  • 1 teaspoon jelly


  1. Prick sweet potato with a fork. Steam in the microwave until soft.
  2. Slice open sweet potato and spread with peanut butter and jelly
  3. Eat out of the skin with a spoon.
