Is it Earth Day yet?
I don’t know about you guys but I am so sick of winter. That said, the bar is set pretty low in terms of satisfaction, at least when it comes to temperature. I saw 38 degrees F in the forecast for this week and started thinking about short sleeves and rosé wine. I’ve got a bottle of this loveliness in the fridge ready to go.
My taste buds are so over this cold weather. Who am I kidding—my whole body is ready for a break. I’m definitely feeling the winter fatigue. Even though it was below freezing the other day, after a day of clients, meetings, and errands, when my stomach started its late afternoon growl, the only thing that appealed was a green smoothie. The body wants what it wants, what can I say?
Here’s what went into the blender:
- 1 cup unsweetened coconut milk
- 1/2 frozen banana
- 1 tbsp cocoa powder
- 1 handful kale
- 2 tbsp chocolate-flavored hemp protein powder
- 5 ice cubes
- 1/4 tsp xanthan gum
I used 1 tsp cacao nibs for garnish with cacao nibs, but you can use whatever sounds good to you: chia seeds, granola, coconut flakes—no wrong answer! Well, I imagine salmon roe would not be the best complement, but I’ve been wrong about these kinds of things before.
