Got another recipe for this month’s Eat your Veggies challenge! I love a good sheet pan dinner for how easy it makes both prep and clean-up—that kind of convenience can help make healthy eating more sustainable. This recipe is a go-to for busy nights. While I certainly appreciate that the salmon-broccoli-sweet potato combo is so basic it’s practically the Pumpkin Spice Latte of sheet pan meals, it’s a delicious one to have in your repertoire. I love the everything bagel seasoning in this, but feel free to swap in your favorite spice blend.

Also, if you’re feeling extra hungry, feel free to double up on veggies—if I’m turning on the oven to make one thing, I often will throw in something else to roast.

Basic Everything Bagel Salmon Sheet Pan Dinner 

Serves 4



Avocado oil spray 

1 tablespoon avocado oil 

1 lb broccoli florets

1 large sweet potato, chopped

1 lb salmon filet (or pressed extra firm tofu, to make this vegetarian)

Everything bagel seasoning

Salt and pepper to taste 



Preheat oven to 400 degrees F. Line baking sheet with foil or parchment paper if desired and spray with avocado oil. 

Toss broccoli and sweet potato with oil and spread on baking sheet. Bake at 400 for 30 minutes.

Remove the sheet pan from the oven and push the veggies aside to make room for the salmon.

Rest the salmon on top and spritz with avocado oil. Sprinkle everything bagel seasoning on top. 

Return the sheet pan to the oven and bake until the salmon is opaque, about 10-15 minutes. 


Serve salmon with broccoli and sweet potato.
