Monday was a busy, productive day for me. Since I actually have a more flexible schedule for a change, I’ve been taking advantage of my professor’s office hours. I want to make sure I get off to a good start with my research project, especially since I have no idea what my schedule will be like later in the semester.

Even though I technically could have worked out at another time, I still got up early to get it done—mentally, it sets me up well for the rest of the day. I also tend to wake up with a lot of energy, so it feels good to jump out of bed and hit the gym. Anyway, I was glad to have the rest of my day free to work on projects, clean and meet a friend for tea.

In the spirit of this month’s “Love Your Veggies” theme, there was plenty of colorful produce on the menu for the day.

Breakfast: Oatmeal with flax, chopped pear, and spices, topped with PB & applesauce

Lunch: Leftover quinoa with spinach, roasted veggies, egg whites, and 1/2 an avocado

Snack: Green smoothie—I was too hungry to remember to take a picture

Dinner: Cornmeal-crusted tilapia, mixed greens, a sweet potato with hummus & goat cheese. The crust on the fish didn’t work out so hot, but it tasted great!
