Since I’m not working this coming weekend, I’m super-excited to have reached the halfway-point of this week!

I feel like Monday had it in for everybodyI talked to—so many travel snafus, a locked employee locker room, technology problems…I was glad I’d taken a day off from the gym, since I ended up having to run around so damn much to hold the day together and get my work done. I also had a nice little contact lens emergency and had to make time to stop home before class to change into my glasses. There are worse things, though—at least it gave me a few minutes to breathe, change, and grab a much-needed snack to get me through an evening lecture on vitamin B6 and iron.

Overall, I enjoyed everything I ate Monday. Some days (especially the busy ones) I feel very “eat to live,” with an appetite that gnaws, so it’s a plus when everything is really tasty.

Breakfast: Oatmeal with chia seeds, banana, and non-fat ricotta, topped with chocolate PB2. This was filling but way too sweet. My taste-buds have changed so much in the past year or so. Once upon a time, this would not have been sweet enough at all. 

Lunch: Cafeteria salad (nothing special, but tasted weirdly good today-maybe because I was so hungry); Trader Joe’s peanut butter sandwich crackers; green tea 

Snacks: grapes, Greek yogurt  with some cereal 

Dinner: Veggies and shrimp in tomato sauce topped with goat cheese; sprouted grain toast with hummus and roasted pepper 

Dessert: Dark chocolate with ginger. So freaking good. I have a new favorite.
