So yeah. I’ve been burning the candle at both ends lately, totally thinking I was pulling it off, but yesterday kicked that idea in the ass. Though I didn’t pass out cold on the floor like last time, I did have to step outside a patient’s room and sit down to drink some juice. And yes, I was still wearing all my contact isolation gear. I seriously shouldn’t be allowed to see oncology patients right before lunch. It’s emotionally overwhelming to me, and when you combine that with low blood sugar and sleep deprivation, you’ve got all the ingredients you need for an embarrassing story. Go figure the one day I’m running short on snacks…Of course, I was totally fine after downing two of those little apple juice cups—mostly just sheepish.

Hah, speaking of food, I’m working my way through the randomness left in my fridge and freezer before I move. A lot of egg-and-vegetable concoctions and weird pasta dishes have been on the menu lately. In addition to consuming a bunch of weird combinations of things (um, 2 salads in one day should not have happened, but I was too tired to think of something else at dinner), I’ve also been really bad at remembering to take photos until I’m either done or almost done eating, as evidenced below.

I have plans for a big grocery shopping trip once I’m settled in my new apartment. Part of why I painted the kitchen in the new place orange was to stimulate creativity—when I’m exhausted and uninspired about cooking I tend to fall into food ruts. In the meantime, though, here’s how Monday looked…

Breakfast: steel-cut oats w/ flax & chia, apple & pea, topped w/ peanut butter  

Lunch: totally forgot to take a picture…giant salad (greens, chickpeas, tomato, & tabbouleh) and an apple

Snack: dry roasted edamame , unpictured baby carrots and apple chips throughout the day

Dinner: veggie burger w/ avocado & roasted pepper, salad w/ beets & feta, dark chocolate 

Snack: yogurt w/ cocoa powder & granola bar crumbles
