This is my first official week on the floors, seeing patients by myself and entering notes into records, so it’s been really busy and exciting. As always happens when the seasons change, however, I’ve had some trouble falling asleep at night (getting up in the morning has never been a problem, for better or worse), so I keep doing things like absentmindedly trying to unlock the subway with my keys, but hey, it happens. At least I’ve been able to enjoy some good food. Here’s a day in the life of my Monday…
Breakfast: steel-cut oats with apple, pumpkin, chia seeds, and chopped prunes cooked in (sounds weird but dried plums=awesome in oatmeal), topped with PB2 and applesauce (I made a big batch Sunday and reheated some)
Lunch: Big salad from the cafeteria; an unpictured apple later
Dinner: Sandwich with hummus, pumpkin, zucchini, roasted eggplant & pepper, baby spinach, and goat cheese; spinach with lentils and goat cheese
Snack: I blame my hormones for this one—plain yogurt mixed with cocoa powder and brownie pieces. Yes, I make brownies and freeze them into individual servings for chocolate emergencies.
