It’s kind of crazy to me that this is my 40th What I Ate Wednesday. The first time I participated, I was actually kind of unsure as to whether I’d keep it up. Was it too tedious, I worried, photographing everything I ate in a day? Does anyone really want to read that? However, it’s ended up begin a really fun way to make some new lovely blog-friends and to see that when it comes to what we eat, there really is no “one size fits all.” I’ve also gotten some great recipe ideas along the way.
While I’m planning to see out my one year WIAW anniversary, I haven’t yet figured out what I’m going to do after that 52nd post. Any thoughts on what you’d like to see?
Yesterday was a pretty typical day, though I felt a little hungrier thanks to my hormones. Ladies, does it drive you a little crazy that what feels like your body conspiring against you is actually just it doing its job?
It’s dawning on me that my days of working from home are drawing to a close (my dietetic internship starts at the end of next month—yikes!), so I’m trying to appreciate the flexibility. I guess technically I’ll still work from home, but it will be mostly at night and at weekends, when I’m actually home. It’s been a while since I’ve had to pack lunch and/or navigate a cafeteria (in the past, I’ve done a mix of both—knowing me, most of my meal credits will go toward caffeine and side salads), so I’m curious to see what that’s like. Even the little things like working out after breakfast are extra-enjoyable. While I know I’ll get in the swing of early-morning gym sessions and living room yoga podcasts, that will be an adjustment, for sure.
Having cooking gas after a week without was also pretty sweet. I’m probably a weirdo for getting so much pleasure out of being able to use a stove (especially when you consider that I was afraid of the stove as a small child—also weird), but hey, there are worse things.
Breakfast: Oats w/ plum, chia seeds and peanut butter
Lunch: Veggie burger w/ tomato & spinach; a side of broccoli w/ parm
Snack: Plain yogurt w/ cocoa powder, strawberries, half a banana and a crumbled graham cracker
Dinner: Slow cooker eggplant chickpea stew (recipe soon) w/ kale & goat cheese; Ezekiel English muffin w/ hummus & roasted pepper
Snack: (unpictured) red wine & mini-cupcake at writers’ group
Given the choice, do you like to work out in the morning? Before or after breakfast? When it comes to packing lunch or buying it, what do you prefer?

Cocoa powder in yogurt is one of my favorite things. Certain times of the month, I swear I could eat it several times a day!
Oh, I would hate not having cooking gas!! I’m glad you have it back now! I am a morning workout person, completely. I have a banana beforehand and a real breakfast after. Am also a total “bringer” of lunch every day!
I like the idea of splitting up breakfast into two parts like that. I have a hard time working out on a totally empty stomach. When I do it first thing, sometimes I’ll have a date or some fruit too.
I am always looking for some healthy meal plans and you have ideas for just about any kind of food. The veggie burger and broccoli looks great. I will be be visiting your site frequently for new healthy food ideas.
