For those of you guys traveling today for the Thanksgiving holiday, wishing you smooth sailing. I can’t believe this week is here. Wasn’t it just the Fourth of July or something? I’ve really been looking forward to having a few days off. The Sunday before Thanksgiving found me in a “get s*** done and clean out the fridge” kind of mood. I also made time for Pilates and restorative yoga to get my body and brain aligned for the week ahead. November I’ve had a lot of chances to recharge (my body wasn’t giving me the option to keep pushing, so I had to listen!) but I know that December is going to be busier, so I think it’s been time very well spent.

The chilly weather made it a good day to stay in and accomplish both of those tasks. For today’s What I Ate Wednesday post, I’m sharing a look at what I ate.

What I Ate Wednesday 346

  • Breakfast: Roasted sweet potato wedges and mushroom & kale cheddar frittata (similar to this recipe)
  • Lunch: A big salad with hummus-marinated chicken and random veggies I was trying to use up
  • Snacks: An apple with cinnamon and a drizzle of honey and tahini ; plain Greek yogurt with ground flax and cinnamon
  • Dinner: Leftover chickpea stew (recipe coming soon) over greens and topped with an egg, goat cheese, and the last spoonful of hummus I was trying to use up ; a square of 90% dark chocolate for dessert.
