Hope you’re having a great week. How’s your week going? After starting my Monday off with a super-fun overnight oats food demo with my Discovery Channel crew, I’m enjoying a busy mix of clients, projects, and other good stuff.
For this week’s Wednesday food diary-esque link-up I’m taking a look back at last weekend.
Because I try to keep the politics talk to a minimum on this blog, I’ll just say that last weekend was a really big deal. I felt incredibly conflicted about not being able to join the women’s march in New York last Saturday. On the one hand, crowds make me very anxious, and being assigned to work at the hospital gave me an easy out. As I watched the coverage unfold through the day, though, I got hit with a rush of emotion. Some many feelings.
I ended up taking a long walk of my own later in the day—a mindfulness walk of sorts. After a hectic, frustrating shift where my head felt foggy the entire time, I decided to skip public transport and take the long way home on foot. The air was warmer and clear. It almost felt like spring. I also did some therapeutic cleaning that night. By the time I got into bed, I felt a lot calmer and more optimistic about the future and hopeful about people’s willingness to communicate and work with one another.
During uncertain times, it’s important for us to take care of each other—and ourselves. Healthy, tasty food is one of the basic components of self-care. I made sure I stayed well nourished through the day. Here’s what was on the menu:
Breakfast: Savory Oats similar to this recipe
Lunch: Salad with tuna added for protein; some dry-roasted edamame partway through the afternoon
After-Work Snack: Greek yogurt with a spoonful of peanut butter
Dinner: A chickpea flour pancake topped with babaganoush, veggies, and an egg, plus tahini and goat cheese
Bedtime Snack: A little more yogurt with a half-teaspoon of maple syrup
