Welcome to another recap of What I Ate Wednesday, which is kind of all over the place now, thanks to Jenn of Peas & Crayons.

This week I got to enjoy another relatively easy Wednesday with a late start at the clinic, so I took advantage of the extra time to enjoy my morning, catch up on work, and have lunch at home with Chris, who also had a late start to his day. Foodwise, there were a lot of leftovers featured. I’m so glad I finally finished off the pumpkin—time to take a little break from the heavy-duty beta-carotene before my hands start turning orange!

Breakfast: Oats with pear, flax, spices, and cottage cheese. Granola sprinkled on top.

Lunch: Leftover rice-seitan randomness from last night plus a salad with roasted veggies & olives, dressed with leftover hummus and tzatziki. A tangerine for dessert—the “just my size” sticker always cracks me up!

VERY Late-Afternoon Snack: Peach & yogurt smoothie (in a bowl) with some oats and sliced strawberries on top.

Late Dinner: Microwave-made pumpkin black bean chili over millet, topped with some nutritional yeast. Weird but good. Two peanut-butter filled “smidgens” for dessert. Not sure why they’re shaped like cows, but hey, Easter candy is Easter candy.
