Happy What I Ate Wednesday. Hope your week is going well. Can you believe it’s the last day of August? I feel like this summer went especially fast. I feel like I meant to take a vacation or something? Fall is coming. The light is changing. The truth is, I’m really excited. I love this time of year, and that back-to-school buzz. I’ve got lots of new, exciting stuff to share with you guys,—soon, I promise.
Since I shared one of those mini-vacations with you guys last week, I thought I’d share a back-to-the-grind day this time around. I’m a little worried my nose is going to fuse to the grindstone, but it’s a risk I’m willing to take. Here’s what I ate last Wednesday.
Breakfast: Savory Oats
Lunch: Salad—an assortment of random stuff, including arugula, avocado, cucumber, roasted pepper, grape tomatoes, roasted eggplant, and an egg. I just used balsamic for dressing.
Snack: Yogurt with coconut flour and blueberries plus a garnish (1/2 teaspoon) of seeds and drizzle of honey
Dinner: Greens with cauliflower rice and cooked veggies and the remaining avocado half, topped with baked wild Atlantic cod and miso-tahini sauce.
Snack: More yogurt, which a tablespoon each cocoa powder and PB2

Okay-what is this yogurt plus coconut flour?! I need to know more!!!IS it plain yogurt?Greek yogurt? Flavored? Do you just sprinkle some coconut flour in there for added flavor/texture? And that dinner looks so so so good. I never have cauliflower rice but you may have inspired me – esp with that fish!
I usually do plain Greek yogurt and add a tablespoon of coconut flour, mix it in with some cinnamon and whatever else I’m adding. It gives it a nice and thick texture that kind of reminds me of cheesecake.
