Happy What I Ate Wednesday. Hope you’re having a great week! Lots going on over in my little corner of the internet, so I’m gonna side-step the chit-chat and get right into the weekly “what I ate” link-up stuff.
I spend last weekend working at the hospital. I was more than okay being in the cool AC than making ambitious face-melting “I’m going to get out and enjoy the city because it’s summer, damnit” plans. Here’s what I enjoyed on Saturday.
Desk Breakfast: Overnight Oats made with plain Greek yogurt, berries, cinnamon, vanilla, and 1 tablespoon each chia seeds, coconut flour, ground flax, and oats. Once I got to the hospital, I mixed up a tablespoon of PB2 with water.
Desk Lunch: Arugula salad with cauliflower rice and tons of veggies, plus an egg, hummus and carrots on the side; an unpictured apple
After-Work Snack: Half an avocado with a teaspoon of hemp hearts
Dinner: An egg-white scramble with sprouted grain toast topped with hummus, eggplant, and goat cheese. Why did I ever get out of the habit of making this for dinner?
Snack: Caramelized banana with a spoonful of plain Greek yogurt (recipe testing)

ALL of your foods look so good! I love adding yogurt to my overnight oats, and that avocado with hemp seeds = perfect! I was in the airport all day Saturday, but my favorite thing was a Chicken Cobb Panini at Au Bon Pain!
Au Bon Pain is one of my go-tos when traveling. They have a lot of somewhat healthy options that don’t suck—a tall order sometimes for airport fare!
Your food on white plates and bowls looks so clean and pretty. Overnight oats are the BEST summer invention; I’m so grateful for my blogger friends introducing them to me. 🙂 The way you put the avocado on the plate looks like it needs to be part of a gourmet restaurant menu.
I’m a big believer in presenting everyday stuff in a way that makes it feel like a special treat. I find that, for me at least, it really ups the enjoyment factor and takes all of 30 seconds.
MM I’ll have to try hemp hearts on avocado! That sounds like a winning combo! I actually haven’t made oats in a while- something I was making everyday- but the hot weather has been making me want juicy fruit and smoothies!

I’ve just recently become obsessed with PB2, but I haven’t tried it in my overnight oats yet, that’s a great idea! My husband and I had a little date night last saturday and went to dinner and a movie =)

Your overnight oats look SO good and filling! I have a serious question though….because I have this issue…having cauliflower and an egg on your salad, does that make your office stinky then?
You mean from how those foods smell? I do try to not throw out garbage that would smell in the RD office (there’s a garbage can in the hall) and apologize if I’m sitting near a coworker. We also usually have the door open. Egg on a salad is not as offensive as, like, heating fish in the microwave, but definitely not the most pleasant smell. From a digestive standpoint, it’s not something I struggle with, but for anyone who does find it challenging, I’d just encourage limiting foods that are difficult that way to places/times you’re less worried about that kind of thing.

I made some banana soft serve last Saturday and I haven’t had that in ages…. Forgot how easy and good it is! Then again it’s winter here in Australia so having something cold hasn’t really been on my radar! Ha!
