Happy What I Ate Wednesday. Hope you’re having a beautiful week so far. I know that last week I shared a work-from-home day, but I thought I’d switch things up and post a day’s worth of food from an actual Wednesday.

For the past two years (OMG how did that go so fast?!) I’ve had ALS clinic every Wednesday afternoon. Sometimes I do floor coverage at the main hospital, sometimes not. On this particular morning, I didn’t have to be in until afternoon clinic, so I treated myself to a walk in the park and a pilates class before heading over. There are certainly some perks to being a morning person.

So let’s do the food diary/#whatadietitianeats thing. Ugh. I hate that hashtags are creeping into my posts, but that’s just what’s up. Anyway.

Breakfast: Savory oatmeal topped with leftover roasted eggplant plus some tahini and goat cheese—that I apparently forgot to take a picture of. Here’s a recycled picture that’s essentially the same thing.

Lunch: I may end up eating lunch at work, but you just have to do what works. This particular day, I had a salad with leftover chicken, cauliflower rice, salsa, and guacamole. I also had some sliced celery and an apple partway through the afternoon.

Snack: Plain Greek yogurt with some of this Barlean’s coconut-flax-chia blend and fresh berries (repurposed pic because I’m terrible at remembering to take pictures lately)

Dinner: I was so hot so wanted something that took minimal cooking. That resulted in more salad—this time topped with tempeh, avocado, hemp hearts, and asparagus.

Bedtime Snack: Ricotta cheesecake dip with (yep) more berries (not pictured)
