Happy What I Ate Wednesday. How’s your week going? If you’ve been with me a while, you know that every Wednesday, I join this weekly link-up where bloggers share a day in the life in food diary form.
I’ve been trying to get a handle on work-life balance recently, but with very mixed success. A few Saturdays ago, I was working a shift at the hospital, NBD. I had it in my head that after clocking out, I’d go home and spend a night in with Netflix and rest up. My Sunday plans involved catching a morning yoga class and doing some food prep before going to a friend’s baby shower/pre-parenthood party at 3 pm Sunday.
Well! Around 2:15 Saturday, as I was in the middle of charting, another friend who was going to the baby shower texted saying she’d see me soon.
“Wait, you mean tomorrow?” I wrote back.
Nope. Turned out the party was starting in less than an hour. Whoops. So, after texting the hostess to let her know what was up, I wrapped up my workday and busted ass to get downtown to said party. When I checked my calendar, I saw I had the event written down on Saturday and Sunday. Somehow I’d just gotten Sunday stuck in my head. Oh well. I was a little embarrassed, but it was a teachable moment. Lesson: Slow the f*** down so you don’t accidentally miss your friend’s baby shower.
On the plus side, I was able to take Sunday at my own pace. It was a deliciously quiet, restorative day. I also found I was wicked hungry. Here’s a look at what I ate as I recouped and regrouped.
Breakfast: Chocolate zucchini bread oats in an almost-empty peanut butter jar
Lunch: Salad with leftover veggies, hard-boiled egg, and avocado toast on the side. Sesame seeds are my new favorite toast-topping.
Snack: I made a batch of cheesecake-inspired yogurt snack (combo of Greek yogurt, cottage cheese, coconut flour, and vanilla) and had some with a tablespoon each of the Barlean’s flax-chia-coconut mixture and PB2 mixed in. I added blueberries and raspberry jam on top.
Partway through the afternoon, I had a lavender kombucha (my favorite mocktail).
Dinner: Spaghetti squash with cabbage, mushrooms, and tempeh. I sprinkled sesame seeds on top. This photo is ugly, but the meal was delicious. I’m obsessed with tempeh lately.
Snack: A sliced banana with some plain yogurt mixed with cocoa powder. I drizzled about 1/4 teaspoon of peanut butter on top—certain times of the month, I totally get food cravings, usually peanut butter and yogurt, so there you go.

Yup, definitely have gotten event dates wrong. Even showed up to a dr appt one week early once! It’s not you.
I love overnight oats and may have to investigate that zucchini concoction as something new!

There must be something in the air, I cannot get enough of tempeh- Maybe because the place I had it from last week doused it in miso and I was in heaven. I need a miso intervention.
OMG—miso is like crack to me. So good.
Once I showed up a day early to a party. It was super awkward at first, since we came to their door with stuff in hand to pack Operation Christmas Child Shoeboxes. My friend answered and said, “Umm, the party is tomorrow… but I’m all set up so if you want to do it now, we can. We’ll just do it again tomorrow.” Turns out she had invited everyone else in person and told them it was on Sunday, whereas she sent me a Facebook invite which had the event set as Saturday. At least she realized the mistake was on her end and we didn’t have to turn our kids around and go back home disappointed. I will definitely be double-checking dates/times more often to avoid this from repeating though!
I have some chai seeds in the cupboard I haven’t used for anything. You’re inspiring me to put them to use!
That’s so nice that worked out! I hope you love the chia seeds if you try them. I use them the most in oatmeal and yogurt, but there is all kinds of stuff you can do with them.
