Happy What I Ate Wednesday. The mid-way point of the week seems to get here quickly, no? Pros and cons. Time flies when you’re busy…being busy? I think it’s time for some coffee.

I’ve talked on here about how I actually enjoy working weekend shifts at the hospital because it gives me more time during the week, but it was really nice to have a weekend to myself for a change. Though I did carve out time to see friends and catch up on work/life stuff, I mostly soaked up the relaxed vibe (and a long, slow yoga class Sunday morning), since I knew I had a crazy week ahead. I also took a little extra time in the kitchen. Here’s a look at what I ate Saturday:

Breakfast: Oatmeal with flax, pumpkin puree, egg white, and cocoa powder cooked in. I added a half-tablespoon of peanut butter on top and a garnish of mini chocolate chips.

Lunch: Leftover red lentil soup with a poached egg and parm and salad

Snack: Same as it ever was—plain yogurt with cocoa powder, coconut flour, and blackberries.

There also might have been an early-evening cocktail in there. I usually stick to wine or bourbon, but it was fun to go somewhere new and try something different—even if it was a whiskey-based drink. Old habits die hard. I have no idea how a person can drink multiple mixed drinks, though. One and I was in my happy-don’t-bother-me place.

Dinner: I’ve been experimenting with Shiratake noodles. This concoction featured a mix of veggies (shiitakes, cruciferous crunch, and roasted broccoli) plus langostino tails and a teaspoon of Trader Joe’s Super Seed & Ancient Grains blend.

Snack: During that time of the month, I crave yogurt like crazy (TMI, sorry), so a few hours later, I ended up eating some more yogurt before bed—this time with a spoonful of PB2 mixed in.
