Good morning and happy What I Ate Wednesday. How’s your week going? First off, wow—somehow I’ve posted 250 of these. That is just ridiculous.
Anyway. For those of you who enjoyed a long weekend, I hope it was restful and restorative. Working in healthcare, I honestly cannot remember the last time I had MLK day off, but I hear it’s really nice. That said, I honestly don’t mind working a weekend at the hospital when I’m able to balance it out with some down-time during the week. I’ve been completely sucking at that recently, but I swear I’m working on it. Sometimes that can be as little as applying some essential oil or painting my toenails or reading a trashy magazine in bed or stepping away from my computer to eat. I also am a big fan of yoga classes as “me” time. Those little bits of self-care go a long way.
For this week’s “What I Ate”-style post, I thought I’d share what I had on Sunday. I’ll be honest that it was kind of a stressful day, but I went to a relaxing yoga class after work and made myself a nice (but so easy) dinner.
Breakfast: It was a savory oats kind of weekend. This is the basic recipe I use, but I’ve been playing around with cooking in whatever greens or other veggies are on their last legs. It’s awesome with tahini on top.
Lunch: Arugula salad with lots of leftover veggies and chicken sausage
Snacks: (unpictured) Pumpkin seeds and a clementine, and later, yogurt with cocoa powder and blackberries
Dinner: Baked salmon with leftover sautéed cruciferous veggies blend
Bedtime snack: I’ve been really enjoying sliced banana with peanut butter or PB2 sauce lately before bed.

Ohhh I’ve never done savory oats! That’s a good idea though! I bet my husband would enjoy them as well!

Taking the time to do something for yourself is so, so important… even if it seems short and small. If we don’t we just won’t be able to put ourselves into our work or other priorities. Love that you make this an essential part of your week. If I have time my major source of self care is going to a coffee shop, getting a nice americano and just writing or reading for a few hours. If I don’t have much time, even just taking a few minutes to sit and stretch and breath or read a few blogs is enough to turn me around. Savoury oats – I need to try!

I’m still trying to get into savory oats, but I like my sweet ones too much. But i guess if I can top it with peanut butter… 😉
I love topping savory oats–or sweet oats–with tahini instead of PB too
I’m allll about the banana and PB lately. Also, I need to pick up from chicken sausage, because that salad looks amazing!
I go through phases where I forget about chicken sausage but it’s so good on salads!

It’s actually tahini, which is my other favorite spread to top my oats with-highly recommend it 🙂
I’m a big fan of using workout time as me-time as well. It can sometimes be stressful to “fit in” a workout when I’m really busy, but I’m always glad that I did!
