Happy What I Ate Wednesday. Is it just me or is this week going super-fast? Because you’re probably here for the food part of this weekly link-up and not my rambling, let’s cut to the chase. This week, I decided to share what I ate on Sunday, mostly because I wanted to share this breakfast pic:

This was oatmeal that had flax, chia, egg white, and mutsu apple cooked in like so.  I topped it with a dried fig leftover from Friday’s mindful cooking class, about 1/2 tbsp peanut butter, and a spoonful of fig butter. It was f***ing delicious and actually kept me full through a busy morning, complete with cleaning, errands, and sweaty yoga.

I completely forgot to take a picture of lunch, however. It looked a lot like this, though:salmon and arugula salad

Around 4:30 I had some Greek yogurt with coconut flour, cocoa powder, and blackberries. Still not over it. cocoa greek yogurt and black berries

Dinner was late, and it was too dark to take a photo, but I can tell you that if you go to El Cento in Hells Kitchen, you should order the pescado veracruzana: wild striped bass with spinach, fried plantains, and salsa veracruzana. I don’t usually have fish twice in one day, but this hit all the right notes. I kind of wish I was eating it right now.
