Happy What I Ate Wednesday. Is it just me or is this week going super-fast? Because you’re probably here for the food part of this weekly link-up and not my rambling, let’s cut to the chase. This week, I decided to share what I ate on Sunday, mostly because I wanted to share this breakfast pic:
This was oatmeal that had flax, chia, egg white, and mutsu apple cooked in like so. I topped it with a dried fig leftover from Friday’s mindful cooking class, about 1/2 tbsp peanut butter, and a spoonful of fig butter. It was f***ing delicious and actually kept me full through a busy morning, complete with cleaning, errands, and sweaty yoga.
I completely forgot to take a picture of lunch, however. It looked a lot like this, though:
Leftover salmon over arugula salad. I also had an Asian pear with a Laughing Cow Light wedge and more fig butter for dessert.
Around 4:30 I had some Greek yogurt with coconut flour, cocoa powder, and blackberries. Still not over it.
Dinner was late, and it was too dark to take a photo, but I can tell you that if you go to El Cento in Hells Kitchen, you should order the pescado veracruzana: wild striped bass with spinach, fried plantains, and salsa veracruzana. I don’t usually have fish twice in one day, but this hit all the right notes. I kind of wish I was eating it right now.
