Pardon the instagram-y-ness. It helps my photos load faster and keeps me entertained. Here’s what I ate on Sunday, the last day of my stay-cation. It’s interesting for me to compare it to the WIAW from my last stay-cation, way back in August. Seeing brunch photos brings back weird summer memories—some good, some bad, some annoying. Let’s just call it a Learning Experience. It’s so funny because at the time you’re all, “OMG, fried eggs, sunshine, beer!” and then seven months later, it’s like, “Ugh. I had the hugest spider bite that day, and that dude would not shut his f***ing face.” Or whatever the equivalent.
But hey, Point A is part of how you get to Point B, and on and on and on. Still, I liked this solo stay-cation much better. Here’s a small sampling of what I enjoyed.
Breakfast: Oatmeal with plum, flax, and lots of cinnamon, cloves, and ginger cooked in, topped with tahini & honey
Post-Yoga “Snack”: A glass of low-sodium v-8 (something I bought to satisfy a very random craving last week)
Lunch: Mixed greens with roasted peppers, chickpeas, and grated pecorino
Snack: (unpictured) Plain Greek yogurt (Trader Joe’s non-fat version is my current favorite) with blueberries and PB2 mixed in, topped with Puffins cereal
Dinner: Kale, mushrooms, and baby shrimp, tossed with whole wheat pasta and topped with grated pecorino
Snack: Blueberries with non-fat ricotta and a crumbled graham cracker
