This past week, New York has enjoyed some beautiful weather. Though winter is set to resume its regular bitching and moaning this weekend, the respite has been a welcome way to break up the February blues just as they were getting unbearable. I feel like I can handle whatever else might be in store.
I don’t know about any of you, but the spring-like temperatures have had me craving warm-weather foods like salads and smoothies. This little creation was the product of some after-nap experimentation this afternoon.
- 1/2 c frozen mango
- 1/2 c frozen strawberries
- 6 oz plain yogurt
- a splash of almond milk
- 2 ice cubes.
Blend until smooth. Pour into a glass and garnish with whatever the hell you want.
To my usual frozen fruit-yogurt mixture, I added a few spoonfuls of leftover granola and also a half-teaspoon of coconut oil to see what would happen—it hardens into a magic shell kind of thing. I’ll definitely be playing around with that more.
After hearing my new supervisor rave to her patients about the benefits of coconut oil, which is a naturally-occuring saturated fat, I decided to try it myself. So far I can tell you it’s awesome in stir-fries and on smoothies—I’m excited to try it in other things. It’s supposed to be a great moisturizer too, so maybe I’ll have to see if it will soothe my winter-weathered hands, which easily look a decade older than the rest of my body.
