Hope you had a good Fathers’ Day—Chris and I met up with my grandfather, sister, cousin Alex, and two of my Aunts for a late lunch at  El Parador. As always, the food was great. My Lobster Enchiladas totally spoiled me for life.

These involved sauteed lobster, scallions, tomato, almonds, nopal (cactus meat?), radishes and pumpkin seed mole. Eating meat-free most of the time makes these kinds of occasional indulgences all the more enjoyable, but I don’t know man, I think it might be all downhill from here. If you want to go out and to the dark (vegetarian) side on a high note, this would be the way to do it.
