Yesterday I went to Chinatown to stock up on tea—I get cranky when my stash gets low—and I picked up a few other items. Aside from jasmine green tea and gunpowder green pearls, I brought home water chestnuts, Japanese eggplants, baby bok choy, vegetarian duck (glorified seitan), and a young coconut for Chris.

To go along with it, I made a stir-fry with more ginger and garlic, the bok choy, water chestnuts, vegetarian duck, and some leftover steamed broccoli. I threw in the last of a batch of brown rice and called it dinner.
We ate while watching a few episodes of In Treatment. We’re both so busy during the week, weeknight dinners together aren’t always a given, so it’s especially nice to be able to hang out and unwind while eating something good.

I love this recipe! I currently have an eggplant in my fridge and was planning on making eggplant parm. But I may have to make this instead!
