I don’t know why it took me so long to try using chia seeds in my oatmeal, but it’s a really fun way to mix it up. I know, calling food “fun” is nerdy and kind of similar to how companies appeal to kids with colorful junk, but seriously! These little seeds (which are packed with healthy fats, fiber, and protein) absorb around ten times their weight in water and turn into little gel balls. All you need is a tablespoon to keep it interesting. Depending on how you feel about texture, you’ll either love this or hate this, but I really dig it.

I’ve never tried making this in the microwave, but you certainly could give it a shot. Since I had the morning off thanks to the snow, I figured I’d make oats on the stove, which takes, you know, ten minutes instead of five. I’m really glad I did.

Ingredients:

  • 1.25 cups water
  • 1/3 c oats
  • 1 banana sliced
  • 1 tbsp chia seeds
  • 1 tbsp cocoa powder
  • 1/4 tsp vanilla
  • 1/4 c cottage cheese (optional)

Directions:

  1. Boil water in a saucepan or small pot.
  2. Turn heat to medium low and add oats, chia seeds, banana and cocoa. Stir well. Continue to stir and break up banana pieces while cooking. Add vanilla
  3. Cook until water is absorbed, about 5 minutes. Add cottage cheese and stir until combined and warmed through.
