Sometimes a simple lunch after a morning of paper-writing is exactly what you need to turn the day around. When I got home from spending the early part of my Saturday wrapping up a draft of my Parkinson’s disease review article, I enjoyed some eggs (fried in a little sesame oil) over leftover whole wheat couscous and braised & glazed brussels sprouts. On top I added a quick miso-tahini sauce and some sesame seeds. Three forms of sesame in one dish—love it.

Seriously, there is nothing like researching swallowing disorders to really make you appreciate food! Even simple things like eggs and vegetables taste fantastic after three hours of words like “bradykinesia,” “deep brain stimulation” and “barium swallow.” My mood perked right up.
