Good morning! Today I’ve got another smoothie recipe to share. Since the unofficial start of summer (aka Memorial Day) is almost here, I’ve got cooling recipes on the brain. The title of this post makes it sound like there’s pot in this smoothie or something, so apologies in advance if the real “secret” is far less exciting to you. So what is it?

My neighbor and I were talking smoothies once and she mentioned that she adds frozen cauliflower to hers. What the what? I had to try it. The verdict? Brilliant.

I used the frozen riced cauliflower from Trader Joe’s, so I can’t speak to other variations but let me know if you try making this with florets or riced raw cauliflower that hasn’t been frozen.

Ingredients: 

  • 1 cup water, coconut water, or unsweetened milk of choice
  • 1-2 scoops protein powder (I used this one)
  • 1 tablespoon PB2 or other peanut butter powder
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon xanthan gum (optional)
  • 1/2 a frozen banana
  • 3/4 cup frozen riced cauliflower
  • 2 cups baby spinach
  • 1 cup ice (or more if needed)

Directions:

Layer ingredients in a blender. Blend until smooth.

Pour into a glass or bowl. Garnish however you like. I went with a drizzle of coconut oil, 1/2 tablespoon of chia seeds, and a pinch of coconut flakes.
