I can't help myself.

On Saturday, it was so nice out, I took a walk instead of getting right to work on research for a paper about dysphagia in Parkinson’s Disease. Somehow, I came home with a set of bangles and scarves from a street vendor. At five dollars a piece, they don’t exactly break the bank, but you should see my closet—I collect scarves like my great aunt collected pigs. Still, the dose of turquoise cheered me up right away. The theme of National Nutrition Month this year may be to “eat right with color,” but it never hurts to wear some too.

Speaking of colorful food, lunch was awesome. I made a batch of falafel burgers I saw on Oh She Glows the other day, and they were fan-f-ing-tastic. Served with warm pita, hummus, veggies, olives, and feta, it really hit the spot.

I’ll be posting the recipe soon, along with a recipe for a chocolate version of the carrot cake oatmeal I made a few weeks ago. For anyone looking to sneak an extra serving of veggies into their day, this is a great way to do it.
