Second sardine post in as many weeks. Why not?
My office-mate probably thinks I’m nuts for eating this stuff, but at least I always throw out the tin in the hallway garbage can! Sardines are actually fantastic mixed into a salad. This morning before I left for work, I suddenly decided to pack lunch and tossed some greens, chopped fresh and dried tomato, and roasted eggplant, cauliflower, and pepper into a big Pyrex container with some balsamic and a sprinkle of goat cheese. It was nice to have something a little fancy for lunch.
