This was one of my favorite lunches I’ve had in a while—and it only cost me $1.99! These roasted beets were everything I wanted them to be and went so well with a lentil walnut burger (complete with greens, tomato, and avocado) and salad.
For the beets:
Directions:
- Preheat oven to 400 degrees F.
- Cut beets into wedges.
- Toss with olive oil and seasonings.
- Line a baking pan with foil. Spreads beets over foil.
- Cover with more foil and bake 1.25 – 1.5 hours.
Ah-mazing. I was a very happy girl after this meal .
