Because it wouldn’t be a patriotic holiday without a stereotypical red, white & blue recipe, I’ve got some appropriately colorful stuff to share with you today. Like this.
This summer I’ve been all about strawberries, but more recently, I’ve been trying to work more blueberries into my diet. Watching a relative go through Alzheimer’s has had me thinking a lot about the brain and how diet might play in to long-term brain health. I’ve been reading up on the MIND diet, which sounds like it could have been sponsored by the Blueberry Council or something. I’m sort of kidding. It’s actually a Mediterranean-and-DASH-diet combo that emphasizes leafy greens and other vegetables, whole grains, beans, berries, lean protein like poultry and fish, olive oil over butter, and a daily glass of wine.
Basically, I have a s*** family history, and the older I get, the more motivation I have to modify the modifiable risk factors. I also happen to love blueberries ; )
I’d originally envisioned some pretty graham cracker cereal crust dessert, but the reality was, well…crumbly and ugly.
Some of us just aren’t meant to make dessert, and that’s okay. Instead, I came up with this patriotic yogurt parfait. I love the texture the coconut flour provides here, but if that’s not your jam, feel free to skip it or swap in ground flax, chia seeds, or even a tablespoon of rolled or instant oats.
- 3/4 cup plain Greek yogurt
- 1 tablespoon coconut flour
- 1/4 teaspoon cinnamon
- 1/2 cup sliced strawberries
- 1/2 cup blueberries
- 1 teaspoon crushed Golden Grahams cereal
- Mix yogurt, coconut flour, and cinnamon together and set aside.
- Layer yogurt mix and berries in a glass or bowl. Top with cereal.
