I can’t take a lick of credit for these amazing PB-Stuffed Banana Bran Muffins, but do yourself a favor and make these ASAP! Not only are they delicious, they also happen to be whole wheat and contain no added sweetener or fats (save for the PB in the filling). They’re also very easy to make egg-free and/or dairy-free, for any vegans out there.
As far as nutrition stats are concerned, in a batch of 12 “smaller” muffins, each one contains around 130 calories, 4.5 grams fat, 2 grams fiber, and about 5 grams protein. Not too shabby—in my humble opinion, it definitely counts towards your “whole grains” quota for the day.
