Sometimes I get on these kicks with certain foods where I want to make it all the time. I’ve been that way recently about breakfast salad. Today I’m linking up with the Recipe ReDux and Sabra Hummus to bring you a fun Mediterranean twist on my go-to.

Hummus is one of my favorite foods to experiment with since you can obviously enjoy it on its own or use as an ingredient in all kinds of dishes. Sure you can make your own hummus, but I always say there’s no shame in shortcuts. I love that Sabra comes in more than 12 flavors so if I want to try something else without having to buy a bunch of other ingredients. I tell myself hummus is one of those things I’ll make from scratch when I’m married or something, but that’s total BS probably.

I love using hummus to make dressing. In this breakfast salad, it works beautifully with other Mediterranean flavors.

Sabra Hummus Breakfast Salad

Mediterranean Breakfast Salad with Hummus Dressing

Serves 1

Ingredients

  • 2 cups greens
  • 1 cup roasted zucchini, pepper, and eggplant slices
  • 2 olives, sliced
  • 2 eggs
  • 2 tablespoons goat or feta cheese
  • 2 tablespoons Sabra Sun-Dried Tomato Hummus
  • water to thin hummus

Directions:

  1. Toss greens with roasted veggies, olives, and cheese.
  2. Whisk together water and hummus until it reaches the desired consistency. Pour dressing over salad and toss well to coat.
  3. Cook eggs to your liking and place over salad.
