A week leading up to travel tends to get pretty interesting as you come up with new and weird ways to use up what’s in the fridge so you don’t have to buy groceries or rely on takeout.

Before our Memorial Day weekend in Maine with Chris’ folks, I hit a few new randomness highs and lows. Luckily, I was able to throw together a pretty decent lunch as I got my book-bag (I need to get a carry-on sized suitcase) packed and ready to go Friday afternoon. Who knew cabbage braised with red pepper flakes and garlic powder could go so well with a spinach-and-cottage-cheese egg-white omelet and sprouted grain toast with hummus?
