Eggs are one of my favorite sources of protein—they’re cheap, filling and nutritious (choline and vitamins A, B12, and D are just a few of the good things in there). They taste great too, which is actually the real reason I like them so much—the rest is just an added bonus.
After being on a kick of eating eggs fried in sesame oil for a while, I’ve gotten into the habit of making a lazy version of shakshouka, a dish of eggs poached in a sauce of tomato, chili peppers, onions and often cumin.
The reason I consider it lazy is that I make it in the microwave. Here’s how:
- Pour tomato sauce and spices into a bowl. Add spices (red pepper flakes, cumin, pepper), maybe a little water to thin it out.
- Crack egg into bowl.
- Microwave about 4-5 minutes, a minute at a time (you can play with the power level if you’re scared to use full power…).
Delicious and lazy, yes, but it’s also not super-authentic. I like to add whatever veggies on hand. One of my favorite versions involves roasted eggplant and spinach. I also add goat cheese on top.
