From a nutritional standpoint, spinach is one of the most perfect foods—it’s low in calories, packed with vitamin A, C, and iron. Its mild flavor pairs well with all kinds of food.
Some of my favorite ways to enjoy it are in salads, sauteed with garlic, and in omelets. I also love it in green smoothies! Did you know you can use pureed spinach in place of green food coloring? I’ve tried this in milkshakes and cookies, but you can also use it in cupcakes, frostings, and practically anything else you can think of!
