I totally thought yesterday was Earth Day, but it turns out today is. Whoops. Well, my Food Management Theory Class celebrated yesterday with our presentations on local sustainable restaurants. My group talked about Dos Toros, a great taqueria in Union Square. Some of the other places covered were Counter (one of my favorite vegan restaurants), Slice (a pizza place that uses natural and organic ingredients and offers gluten-free and vegan options), and Chestnut (a restaurant located in Brooklyn that focuses on seasonal foods).
I’m also very curious about Otarian, a small chain of restaurants that post the carbon footprint count for their menu items. Gimmicky, maybe, but it’s a gimmick I’m okay with.
Into the blender went:
1/2 a banana
2 sliced strawberries
1 handful spinach
1 handful kale
3/4 cup plain yogurt
1/2 tsp vanilla
1/2 scoop vanilla protein powder
After blending, I poured the mix into a bowl and topped it with some Trader Joe’s O’s. It was pretty spectacular.
