While I’m not a fan of traditional grilled cheese made with white bread and American cheese, once in a while a grilled sandwich of goat cheese with roasted peppers, roasted zucchini, and greens (on whole wheat, of course) hits the spot. Paired with a nice salad, it’s the perfect dinner for a relaxing night when all I have to do is finish work assignments, start schoolwork, and catch up on Mad Men with Chris.
