After talking about comfort food yesterday, it seemed fitting to share a recent example. Now, when I think of comfort food, I think of nourishing, healthy things and also of things that are a little nicer than what I’d generally make on a weeknight—sometimes a gal needs something a bit fancier than soup and toast or, like, eggs. Still, the same everyday rules of thumb apply: Putting 90% overtly-good-for-you stuff on the plate leaves a little room for something like a strip of bacon. Seems to work out pretty well 🙂

I followed this recipe from The Spicy Stiletto almost to the letter. The only difference was that I added an extra clove of garlic and used kale instead of spinach because that’s what I had. I also used olive oil only because I gave up on buying butter a while ago—it always goes bad before I got around to using it up. I also had no broth for the lentils, but whatever—water and spices works fine! Okay, so maybe I didn’t follow the recipe as closely as I thought, but same concept!

This was absolutely the perfect calm-down meal. I would even make this on a normal day! It was quick, easy, and freaking delicious.
