Happy Thursday! Hope you’re enjoying a good week. I’m just popping in with some random stuff to share from the past few days.

*I always like to ask new clients and patients what they feel they do well when it comes to healthy eating. This week, someone said, “I eat breakfast every day.” I wanted to give them a high-five. I love when people make breakfast a priority.

On Monday, I did a food demo at the Discovery Channel where we made and sampled overnight oats. It was really fun and it was cool to introduce some of the participants who’d never had it to something new. Sometimes we’re afraid to branch out because we’re not sure whether we’ll like something, so being there for the lightbulb moment is one of my favorite parts of my job.

Here’s the basic recipe:

  • ⅓ cup rolled oats
  • 1 tablespoon chia seeds
  • 1/4 teaspoon cinnamon
  • ¼ teaspoon vanilla extract
  • ⅔-1 cup milk of choice
  • Optional mix-ins: ½ a banana, ½ cup berries, or ½ cup pumpkin,
  • 1 tablespoon cocoa powder
  • 1 scoop protein powder (optional)
  • Toppings: Fruit, nuts, nut butter, shredded coconut, etc.

Directions:

  1. Combine oats, chia seeds, cinnamon, vanilla, and milk. If using fruit, cocoa, or protein powder, add now.
  2. Stir to mix well and cover. Store in the fridge at least 4 hours or overnight.
  3. When you’re ready to eat, remove lid, stir, and top with desired toppings.

This can be enjoyed hot or cold. If you want to heat yours up, uncover and pop in the microwave for a minute or until warm. Give it a good stir and add your favorite toppings.

*I don’t post often about celebrity deaths but I’ve been oddly reflective since hearing about Mary Tyler Moore’s passing. While I spent a lot of time outside as a child climbing trees and building forts and exploring the woods near my house, I also watched a LOT of TV—especially Nick at Nite. The Mary Tyler Moore Show was one of my favorites. Seeing a single woman out there killing it in her career was powerful for a little girl to see. I used to daydream and write in my journal about my big-city life where I kicked butt and made a name for myself as a writer. The boys were in the picture but they were just a part of the bigger story of living my life on my own terms and loving it. I was sad to hear of her passing but find myself wanting to say thank you. I don’t stop and appreciate it much, but it’s pretty cool to take a step back and realize you’re doing exactly what you dreamed about as a kid. Maybe some of you guys can relate?
