I know I haven’t done a Friday post in a while but I couldn’t decide which hummus recipe I wanted to share with you guys.I hope you enjoyed Monday’s recipe. I liked them both so much and have already made them each several times over. National Hummus Day is tomorrow, so I’m linking up again with the Recipe ReDux to share another hummus dish that’s great as an appetizer or made into a meal.

Hummus is awesome for binding ingredients in things like meatballs when you don’t want to use eggs or go overboard on cheese. I’d been wanting to try zucchini boats for a while, and I’m so glad I finally did! I’m not sure what my mental block was. I think on some level, it’s because I kept seeing these on family-friendly blogs and spun as something kid-pleasing, yadda yadda. Maybe some part of my brain was, like, am I allowed to make these for just myself?

Anyway, glad I got over that hang-up. These will especially great come summertime, when zucchini will be so abundant, we’ll be trying to come up with ways to use them up. This dish comes together in a half-hour and tastes delicious on its own or pairs wonderfully with salad. Enjoy!

Sabra-Hummus-Zucchini-Boat

Easy Mediterranean Zucchini Boats

Ingredients:

  • 2 medium zucchini, ends trimmed and halved
  • ½ lb cooked ground chicken
  • ¼ cup goat cheese
  • ½ cup roasted red pepper hummus

Directions:

  1. Line a baking sheet with foil. Preheat oven to 350 degrees F.
  2. Using a melon baller or spoon, scoop out zucchini flesh. Cut into half-inch chunks.
  3. In a large bowl, combine zucchini, chicken, and hummus. Fold in goat cheese.
  4. Evenly divide hummus and chicken mixture amongst zucchini halves. Bake at 350 degrees for 20-25 minutes or until the tops are browned. Remove from oven and serve.

Makes 4 boats
