With the rising costs of food-healthy eating at times seems like a pipe dream. However, when you allow creativity to include itself in your cooking-it can be more of a reality. This is what I hope you can see in this uber-amazing recipe: Hummus Crusted Chicken. 

Personally, I love sharing recipes with you because it makes me happy to know that you’re able to make and enjoy the same meals that my family and I love! This one in particular is one of my favorite easy and versatile meals. It won’t break your bank but will still be easy on the waistline and yummy for all ages to boot!

It’s also a great source of lean protein and it’s perfect for busy weeknights because it can be ready in 30 minutes and perfect to pair with pretty much any veggie side. 

If you are a long-time fan, you may recognize it a bit-it’s actually a streamlined version of a hummus-marinated chicken recipe I created in 2017. I used to make it almost every week and am currently returning it to its rightful space in the rotation.

In fact, while a great dinner, it can also be used as a salad topper or sandwich stuffer, making it perfect for lunch too!

 

Without further ado, I present the Incredible Hummus-Crusted Chicken recipe.

Easiest Hummus-Crusted Chicken

Serves 4

Ingredients:

  • Avocado oil or avocado oil spray for baking sheet
  • 1 pound chicken breast, cut into tenders*
  • 1/3 cup hummus (can thin out with water if desired)
  • ½ teaspoon Paprika

Directions:

  1. Preheat the oven to 450 degrees F. Lightly grease a baking sheet with avocado oil or avocado oil spray.
  2. Pat chicken dry with paper towels. Spread the hummus over the chicken to coat and sprinkle paprika on top.
  3. Place chicken on a baking sheet and bake at 450 for about 20 minutes or until chicken is cooked to 165 degrees F.

 

*You can also make this with fish, tofu, or tempeh – just know that cooking time may vary when you change things up.
