The holidays are a great time to pause and reflect on what we’re grateful for. Great reason to take a moment to share some food stuff I’m obsessed with lately.
-Veggie & Egg Breakfast Bowls
Though I still do a lot of frittatas during the week, I’ve been loving egg & veggie bowls for weekend breakfasts. I’ll use whatever leftover cooked vegetables I have handy and then fry a few eggs to put on top. Perfection!
I always say maybe it’s that tiny bit of vitamin D that makes me crave mushrooms in the darker months, but it could also just be that they’re delicious cooked with shallots in a little butter and red wine. Here’s my go-to recipe, which is very similar.
I have been loving hemp hearts on top of soup lately. It’s a great way to add some healthy fats and a little bit of protein. Manitoba Harvest sent me this delicious blend that also features garlic, onion, and rosemary. Amazing on split pea soup, salad, and eggs!
-Trader Joe’s Plain Skyr
When I saw this at my local store it was like my prayers had been answered. Though my heart belongs to Greek yogurt, I absolutely love the thick, creamy texture of skyr. It’s like eating cream cheese with a spoon-in a good way.
-Yogurt with Pumpkin & Flax
I almost always have plain Greek yogurt (or skyr!) as an afternoon snack, and recently I’ve been loving it with pumpkin, ground flax, cinnamon, and vanilla extract mixed in. A drizzle of maple syrup on top = perfection.
While I enjoy wine on occasion and use it for cooking, my heart belongs to whiskey. I bought myself a bottle of Jameson Caskmates as my reward after wrapping a big project in October, and I’ve been loving it for it’s subtle notes of coffee and chocolate. I usually overlook Jameson but this totally won me over.
