In the middle of winter when it feels like nothing good is in season, clementines come to the rescue. This adorable superfood provides a much-needed pick-me-up thanks to its immune-boosting vitamin C that also helps perk up dull winter skin. No matter what the weather is like outside, the bright citrus flavor will put you in a good mood.

One small clementine provides about 35 calories and almost half your daily vitamin C needs. Clementines are also a good source of fiber, thiamin, folate, and potassium.

This nutritious winter salad combines the bright pop of clementines with the warm earthy flavors of butter beans and farro. Hemp hearts and avocado provide nourishing healthy fats to help keep winter skin soft. The result is a balanced vegan meal packed with vitamins, minerals, filling fiber, and a hearty dose of plant protein. Enjoy as a vegan side dish or put an egg on top for an added protein boost.

Clementine and Farro Superfood Salad

Ingredients:

  • 4 clementines, divided

  • ¼ cup olive oil

  • Sea salt and pepper to taste

  • 6 cups arugula or other leafy greens

  • 2 cups butter beans

  • 1 cup cooked farro

  • 1 avocado, chopped

  • 2 tablespoons hemp hearts

Directions:

  1. Squeeze juice from two of the clementines and strain with a fork to remove seeds.

  2. Whisk together olive oil, clementine juice, and sea salt and pepper, if using, to make dressing.

  3. Peel and section remaining clementines.

  4. In a large bowl, mix arugula with farro, butter beans, clementine sections, avocado, and hemp hearts.

  5. Toss salad with dressing.

  6. Divide between 4 plates.
