For dinner I made a turkey sandwich with avocado, baby spinach and roasted peppers on wheat bread. I also brought a few apples to get me through the weekend, along with some other easy-to-pack items (those peanut butter cracker things are among the “seriously need to just freaking get rid of this before it goes bad” collection in my cupboard). Now, if only Amtrak trains had a juice bar…
